Thanks for those who are interested in this recipe. The picture is of Thai "bird peppers" or phrik khii nuu in Thai (which means mouse poo chili...because it looks like it...I know, not very polite, but it is true!)Anyway, these chilis are HOT. They are small, about 2-3 cm long and are green or red in color. If you can't find them in the area in which you live, you can substitute with another pepper. According to a site I found thru a google search you can substitute chile de Arbol, fresh cayenne or jalapeno (but it won't be as spicy) I hope that helps!
As to the dough recipe...this is from my More with Less cookbook my mother-in-law gave me a few years back (a great resource if you are missionary OR if you are concerned about the world's food resources...the Mennonites published it years ago).
Combine in a large bowl:
1 cup warm water
1 pkg. yeast (or 2 1/4 tsp)
When dissolved, add:
1 T. sugar
1 1/2 tsp salt
2 T. veg. oil
1 1/4 c flour
Beat until smooth. Add:
2 c. additional flour, or enough to make dough stiff (may use part whole wheat)
Knead until elastic (about 5 minutes). Place in a greased bowl and let rise until double, about 45 mins. Form 2 balls. Pat and stretch to fill 2 greased pizza pans. Let rise 10 mins.
